Hearty Yak Shred & Vegetable Soup



• 2 lb cooked yak shred
• 1 medium onion (chopped)
• 2 t olive oil
• 1 15 oz can sliced stewed tomatoes
• 1 C peas (frozen)
• 1 C corn (frozen)
• 1 C beans (frozen)
• 1 C carrots peeled and sliced
• 1 C celery sliced
• 2 C water
• 1/2 C red wine
• 2 t bouillion either beef or chicken


Heat the olive oil in a large pot on your stove and saute the onion until it is tender. Add the shred to the pot separating it with a fork or your fingers. Add the remaining ingredients and bring to a low simmer for a half hour or so. This soup could almost be considered a hearty stew. Serve it with your favorite bread or muffins for a delicious meal that is so quick and easy!!
