Spicy Venison Pita Sandwiches

 

INGREDIENTS:

Burgers:

  • 1 1/2 lb. lean ground venison or (substitute)
  • 1/3 cup unseasoned dry bread crumbs 
  • 1 egg
  • 3 tablespoons chopped onion
  • 1 tablespoon frozen orange juice concentrate, defrosted
  • 3 cloves garlic, minced
  • 1 1/2 teaspoons grated fresh ginger root
  • 1 1/2 teaspoon fennel seed
  • 1/2 teaspoon curry powder
  • 1/4 teaspoon cayenne
  • 8 pita loaves (6 inch)

Toppings:

  • Sliced tomato
  • Sliced cucumber
  • Leaf lettuce Sliced
  • onion
  • Plain nonfat or low fat yogurt

Directions:

In large mixing bowl, combine burger ingredients. Shape mixture into eight 1/2 inch thick patties. arrange patties on rack in broiler pan, or prepare grill for barbecuing. Place pan under broiler with surface of meat 3 to 4 inches from heat. Broil or grill for 8 to 10 minutes, or until meat is desired doneness, turning patties over once. Make slit in one end of each pita. Place 1 burger and desired toppings in each pita.
