TERRAPIN NEWBURG

 

Directions:

Blend 2 tbsp. of flour into 4 tbsp. of melted sweet butter; slowly add a cup of cream, stirring constantly to produce a thick and smooth mixture, but don't let it boil. Stir in 2 well-beaten egg yolks, and place in top of a double boiler or chafing dish. Add meat from 2 terrapin, salt, and cayenne pepper, terrapin eggs and liver, and simmer until the mixture is heated through. Add sherry Madeira and cognac to taste.
