1 teaspoon cayenne pepper
3 teaspoons thyme
1 teaspoon oregano
2 teaspoons paprika
1 teaspoon black pepper
5 teaspoons basil
1 teaspoon garlic powder
1 teaspoon salt
Redfish fillets
Heat cast iron skillet over a high heat until it is "white" hot. Combine dry spices. Press the seasoning mixture over both sides of fish. Sprinkle 1 teaspoon salt in the hot skillet, and add fillets. Cook fish until undersides blacken, then turn and cook other side.
