Canadian Sauteed Partridge Slices

 

INGREDIENTS:

1 Partridge breast
1 c Flour
1/2 ts Paprika
2 tb Butter
Salt and pepper

Directions:

Clean partridge breast and remove skin. Cut into thin slices. Dip each slice of meat in mixture of flour, paprika, salt and pepper. Preheat a heavy skillet, preferably cast iron. Slowly saute breast slices in butter over low heat until crisp and golden brown, about 14-16 minutes on each side. Serve with your favorite salad, vegetables and potato.
