Coot Stew

 

INGREDIENTS:

  • 2 coots, cleaned and skinned
  • 3 stalks celery
  • Margarine
  • 1 small onion
  • 1 pound potatoes
  • 1 tablespoon beef extract
  • 2 carrots

Directions:

Brown coots quickly in butter in dutch oven. Add potatoes, carrots, celery, onion - all cut into large pieces. Add beef or prepared gravy extract and 2 cups hot water. Cook slowly for 2 hours. Serves 5.
