Coot Savory

 

INGREDIENTS:

  • 2 coots, cleaned and skinned
  • Salt and pepper to taste
  • 1 tablespoon oregano

Directions:

Split, disjoint and brown 2 coots in dutch oven or heavy skillet. Add 2 cups of hot water, oregano, salt and pepper to taste. Simmer slowly for 2 hours.
