CATFISH PARMESAN

 

INGREDIENTS:

2/3 cup freshly grated Parmesan cheese
1/4 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
1 teaspoon paprika
1 egg, beaten
1/4 cup milk
5 to 6 small catfish fillets (about 2 pounds)
1/4 cup margarine, melted
1/3 cup sliced almonds

Directions:

Combine first 5 ingredients; stir well. Combine egg and milk; stir well. Dip fillets in egg mixture; dredge in flour mixture. Arrange in a lightly greased 13x9x2-inch baking dish; drizzle with butter. Sprinkle almonds over top. Bake at 350 for 35 to 40 minutes or until fish flakes easily when tested with a fork
