Grilled Amberjack with Orange Butter Almond Sauce

 

INGREDIENTS:

2 lbs. Amberjack
Orange Butter Almond Sauce
1/4 lb. Butter
1/4 c. Orange Juice Concentrate
1/4 c. White Wine
2 - 3 dozen Yellow Raisins
a dash of Soy Sauce
sm. handful of Sliced Almonds

Directions:
Grill fish and brush with butter while cooking. In sauce pan cook over low heat all ingredients (do not add almonds) while hot whisk until it becomes a smooth sauce. Pour over the grilled Amberjack and sprinkle Almond on top of fish.
